Here are the steps for preparing baked pumpkin au gratin:

  1. Cut the pumpkin into cubes, removing the skin
  2. In a saucepan, melt 50 gr (1,8 oz) of butter
  3. Put the pumpkin in cubes and let it flavor for a few minutes.
  4. Add the four tablespoons of water, cover and cook until softened
  5. Add salt
  6. As soon as the pumpkin is soft, put it in a bowl and mash it with a fork
  7. Place the crushed pumpkin pulp in a skillet
  8. Add the milk, remaining butter, breadcrumbs and starch
  9. Stir first with a whisk to dissolve the starch well and then with a wooden spoon
  10. Put the pan on the stove and cook for about 20 minutes. You’ll notice that it dries out a bit
  11. Remove from heat and add egg yolks
  12. Whip the egg whites until stiff and add them to the pumpkin pulp
